Italian Style Chicken

Ingredients:
3 ounces chicken tenderloin, sliced diagonally
3/4 cup onion, chopped
1/4 cup chickpeas, rinsed
1 1/2 cups plum tomatoes, chopped
5 cups spinach, chopped
1 teaspoon olive oil, divided
1/2 cup chicken stock
1/2 teaspoon Worcestershire sauce
1 teaspoon garlic, chopped
1 1/2 teaspoon dried oregano
salt and pepper, to taste

Instructions:
In a medium nonstick sauté pan, heat 2/3 teaspoon oil. Add chicken, 1/2 cup onion and Worcestershire sauce. Stir-fry until chicken is done. In a second nonstick sauté pan heat remaining oil. Stir in remaining onion, chickpeas, plum tomatoes, spinach, stock, garlic, oregano, and salt and pepper. Sauté until spinach begins to wilt. Place vegetable mixture on serving plate and top with chicken.
