4 Block Meal
Ingredients:
4 ounces chicken tenders
Fat-free, low sodium chicken broth
1 taco shell (corn)
2 tablespoons low-fat, plain yogurt
Chili powder
Onion powder
Ground cumin
Dash of hot sauce (optional)
1 leaf lettuce, shredded (optional)
1 slice tomato, chopped (optional)
1 tablespoon sweet onion, chopped (optional)
1/2 cup black beans, canned
4 tablespoons guacamole
Instructions:
Place salsa and chicken into pot. Pour enough broth to cover chicken. Bring to a boil. Once boiling, cover and reduce heat to low. Cook on low setting for two or more hours. When you are about ready to eat, begin to heat the black beans in pot or microwave.
