Ingredients:
4 ½ oz. of cod or haddock
1 teaspoon olive oil
1 cup onion – chopped
1 green pepper – chopped
1 cup tomato – chopped
¼ cup slice green olives
1 Tablespoon capers
1 Tablespoon parsley
1 Tablespoon cilantro
1 teaspoon wine vinegar
1 cup mixed berries or 1 apple or 1 orange or 1 pear
Instructions:
Heat the olive oil in an oven proof sauté pan over medium heat. Add in onion, green pepper and sauté for 2 minutes. Add in green olives, capers, parsley, cilantro and wine vinegar cook for another 2-3 minutes. Add the fish and place in the oven at 325 degrees until fish is flaky, about 12-15 minutes. Have fruit for dessert.
