Here is a Zone stew recipe, perfect for those days when the weather outside is frightful.
3 ounces chicken tenderloin, diced
1/3 cup orange juice
1/3 cup Mandarin oranges
4 cups mushrooms, sliced
1 teaspoon olive oil, divided
1 tablespoon cider vinegar
1 tablespoon parsley, chopped
1/2 teaspoon garlic, chopped
1/2 teaspoon pure orange extract
Salt and pepper, to taste
In a medium nonstick sauté pan, heat 2/3 teaspoon oil. Add chicken, vinegar, parsley, garlic, and salt and pepper. In a second nonstick sauté pan heat remaining oil and sauté mushrooms until they soften. Add orange juice, oranges, and orange extract to the first pan and simmer for 3 minutes. Place mushrooms in a serving bowl and top with chicken mixture.
