Serving for a typical male
Ingredients:
4 ounces pork loin, sliced 1/8-inch thick
1 pear, diced
5 cups romaine lettuce, shredded
1 teaspoon brown sugar
1/2 cup blueberries
1/2 cup scallion shredded
1 1/3 teaspoons olive oil divided
1/2 teaspoon soy sauce
1 tablespoon lemon- and lime-flavored water
2 teaspoons mint, minced
2 teaspoons Dijon mustard
1 tablespoon cider vinegar
2 tablespoons red wine vinegar
1/8 teaspoon celery salt
1/8 teaspoon black pepper
Instructions:
In a glass bowl combine 2/3 teaspoon oil, mustard, cider vinegar, and brown sugar. Add pork and turn to coat. Cover and refrigerate for 30 minutes. When pork is done marinating, add the mixture to a medium nonstick sauté pan. Sauté until the pork is cooked through. Stir in the pears, blueberries, mint, and water. In a medium bowl mix together the 2/3 teaspoon oil, soy sauce, red wine vinegar, scallions, romaine, celery salt, and black pepper. Spoon vegetable mixture onto serving plate and top with pork and fruit mixture.
