Near Eastern-Inspired Chicken

4 Block Meal

Ingredients:
4 ounces chicken breast or tenders
14.5 ounce can diced tomatoes
1 cup pre-marinated artichoke hearts
1/4 cup chickpeas
1 teaspoon tahini or 1 block of nut butter
Cumin, to taste
coriander, to taste
ginger root, to taste

Instructions:
Slight mist of olive oil or PAM Cut the chicken into bite-size pieces and brown one side in a mist of olive oil. Add the artichoke hearts and flip the chicken. (The other side will brown in the oily artichoke marinade.) Add tomatoes, chickpeas, and spices. Simmer covered for 15 minutes, then uncover and let the sauce reduce if watery. Stir in tahini or nut butter and serve.
