2 - 1 Block Snacks
Ingredients:
3 cups chopped mushrooms
3 cups fresh spinach
1/2 cup chopped onion
1 oz lowfat mozzarella cheese
3/4 oz freshly grated parmesean cheese
2/3 teaspoon olive oil
1-2 cloves garlic
1 teaspoon oregano
Instrucitons:
Remove stems from mushrooms, set aside. Spray casserole dish with cooking spray. Place caps in dish and bake at 450 for 5 minutes. Finely chop mushroom stems, onion, garlic and spinach.Saute in non-stick pan with oil until tender. Add oregano and cheese to mixture. Fill mushroom caps with filling and broil until heated through. Editor's note One could substitute 1 1/2 oz. cooked baby shrimp chopped for the Parmesan or go half and half with the shrimp and Parmesan. If there is more stuffing than mushrooms, eat extra on the side. Or give half to a friend and half for yourself for a one-block snack as a special treat.
