6 Block Meal
¾ cup egg substitute
4½ oz. shrimp or scallops (cooked/chopped)
1½ cup pineapple, cubed
2 peaches, cubed
¾ cup cantaloupe, cubed
1 Tbsp. Zone Extra Virgin Olive Oil
Cut seafood into small pieces and warm in a pan with the olive oil and a bit of salt. Beat egg substitute and pour over the seafood, mixing well. Cut the pineapple, peaches and cantaloupe into small cubes. Mix lime juice with a tiny amount of vanilla extract. Let sit for a bit, and then add to the fruit.
