There's always a way to make your favorite breakfast even better by adding things which are very good for you. I usually make my polka-dotted omelette with black beans or red kidney beans but didn't have any on hand at the time so I used left-over cooked lentils that I had in a bowl in the fridge. The wonderful thing about the Zone is that you can be creative with very little and come up with something original that tastes good!!

Ingredients:
½ cup egg-beaters
1 oz. Canadian bacon thinly sliced
1 oz. shredded soy mozzarella cheese
½ cup cooked organic brown lentils
1 tsp. olive oil
2 Stella Doro plain breadsticks
1 peach or other available fruit to equal one carb block
Instructions:
Mix cooked lentils with ½ cup egg-beaters to distribute lentils. spray non-stick pan a few times and bring up to heat. Add egg + lentil mixture and cook through before turning. Flip over with spatula and add the soy cheese and bacon. Cook until cheese melts then flip in half to complete omelette. Place cooked omelette in flat dish and wait a minute until it cools down a bit. Take the olive oil (1tsp.) and drizzle over omelette before serving. Instead of toast use 2 stella doro breadsticks that equal 1 carb block. Have 1 whole fruit for desert.
