3 block meal
1/2 cup egg substitute
1 tblsp olive oil
1 cup frozen diced onions and peppers blend
1 oz. slice provolone cheese
1/4 cup small chick peas
oregano, basil, salt, and pepper to taste
2 tomatoes -sliced
Heat olive oil in pan, add onions and peppers and cook until softened, Add chick peas and cook until heated through. Beat egg substitute until slightly foamy and pour over vegetables covering bottom of pan. Add spices to taste. Add provolone, cover, and cook on low-medium until egg whites are done and cheese is melted. Fold into thirds.Cut tomatoes in half, then slice and season with salt and pepper, and serve on the side. Enjoy!
The chick peas may be smashed first if they are large.
