South of the Border Omelet

Serving for a typical female

Ingredients:
4 egg whites
1 oz low fat cheddar cheese, grated
3/4 cup chopped onion
1/2 cup chopped red bell pepper
1 cup chopped fresh mushrooms
1 teaspoon olive oil
1/4 cup of black beans (heated)
Dash of salt
Dash of pepper
1/4 teaspoon south west chipotle seasoning (try Mrs. Dash)
Oil spray if needed
1/2 orange

Instructions:
Mix egg whites with salt, pepper and Southwest seasoning. In a small pan, sauté vegetables with olive oil. Add to egg mix. Spray pan with oil and add mix of eggs and sautéed vegetables. Cover and cook for about 2 min at medium heat. Turn omelet over and top with cheese. Cover and cook for another 2 minutes. Put on plate and add black beans on top. Serve with orange on the side.
