Mandarin Orange Scramble

Ingredients:
1/4 cup low-fat cottage cheese
1/2 cup egg substitute
2 cups mushrooms, sliced
3/4 cup onion, chopped
1 cup mixed peppers, cut in half and sliced*
3/4 cup snow peas, julienned
1/3 cup Mandarin orange sections
1 teaspoon olive oil
1 teaspoon balsamic vinegar
1/2 teaspoon Worcestershire sauce
1/4 teaspoon celery salt
1/4 teaspoon dried dill
1/4 teaspoon lemon herb seasoning

Instructions:
Heat oil in a medium nonstick sauté pan. Sauté mushrooms, onion, peppers, vinegar, Worcestershire sauce, celery salt, and dill. Cook until the vegetables are crisp-tender, about 5 to 7 minutes, then pour in the egg substitute and snow peas. Cook, stirring, until set. Remove from heat and stir in cottage cheese and mandarin orange sections. Sprinkle on lemon herb seasoning and serve. *Note: Equal portions of red, yellow, and green peppers.
