2 slices of soy breakfast sausage
1/2 cup of egg substitute
1/2 slice of wheat English Muffin
1 teaspoon natural almond or peanut butter, spread on muffin
1 cup of fresh or frozen blueberries
1 cup of strawberries or other fruit
1 teaspoon olive oil
Add olive oil to skillet. Place the sausage patties in a skillet and fry for about 30 seconds. Remove from skillet and add egg substitute. Scramble and season with salt and pepper. Place 1/2 muffin in toaster oven on toaster setting. Remove and add the almond or peanut butter. Place fruit on plate with egg, sausage and muffin. This breakfast is eaten Monday-Friday. My husband loves it after his workout at the YMCA.
