Ingredients:
3 cups chopped tomatoes
1/2 teaspoon mined garlic
1/2 small jalapeno minced (seeds removed)
1/2 onion, sliced
1/4 teaspoon crushed oregano
1/2 cup canned black beans (rinsed/drained)
1 1/2 cups egg beaters
2 teaspoons olive oil
2 wraps, low carb
1 orange/apple per serving
Instructions:
In blender puree tomatoes, garlic and jalapeno. Place in small saucepan. Add black beans and oregano and keep warm on stove or microwave. In a medium non-stick sauté pan heat two teaspoons of olive oil. Sauté onion. When soft, add in egg substitute. Cook eggs until just set. Place low-carb wraps on hot skillet and toast both sides Assemble Huevos Rancheros: place wrap on plate, portion half of the eggs, top with half the salsa (tomato puree). Have with a piece of fruit, apple or orange.
