Southwest Omelette

Ingredients:
4 egg whites
1 oz shredded Mozzarella cheese
3 slices Jennie-O Lean Turkey Bacon
1 teaspoon olive oil
3 black olives, sliced
1/4 cup rinsed canned black beans
1 cup diced onion
1/2 cup salsa
1 cup diced tomato
4 pickled jalapeno rings
Several drops of Tabasco sauce (optional)
Black Pepper to taste
Fresh Cilantro to taste

Instructions:
In a bowl, mix diced tomato, salsa, Tabasco, cilantro and black pepper. Add 1/2 of olive oil to a small nonstick frying pan and heat. Add onion and turkey bacon. Saute over low heat until onion starts to soften on edges (just a couple of minutes). Remove from pan. Mix remaining olive oil and egg whites and whisk briefly. Add to a saute pan over low heat and cook until firm enough to flip. Flip egg whites. Add black pepper to egg and cook for a few seconds. Add bacon/onion mixture and top with mozzarella cheese. Cook for a few seconds more to melt cheese. Add black beans and tomato mixture. Fold omelette in half and slide onto plate. Garnish with jalapeno rings. Enjoy with a large glass of water, especially if you use a lot of Tabasco!
