Ingredients:
4 egg whites
1 oz. shredded low-fat Mozzarella Cheese
1/4 c. Black Beans
1 c. onions
1/2 cup Salsa
2/3 tsp. Olive Oil
1 Tbs. Guacamole
Instructions:
Crack eggs and separate yolk from whites - set aside. Heat non-stick skillet and add Olive Oil. Heat Black Beans in Microwave until warm. Sauté Onions in Olive Oil until tender. Add eggs to onions and scramble. Place egg mixture on plate. Place salsa on top of egg mixture. Place beans on top of Salsa. Place Cheese on top of beans. If needed put plate in Microwave for 20 seconds to melt cheese. Place Guacamole on top of cheese. Enjoy!
