Ingredients:
3/4 cup Egg Beaters
2 cup chopped zucchini
1 1/2 cup chopped onion
1 oz, low-fat grated cheese ( I used cheddar)
1 orange
1 1/3 tsp. olive oil
Garlic to taste
Salt to taste
Pepper to taste
Instructions:
In a medium, non-stick sauté pan, heat 1 1/3 teaspoons of olive oil. Sauté onion and zucchini until barely tender, about 3-5 minutes over medium heat. You can add some pepper and garlic salt at this time. Meanwhile, whisk egg beaters and add to vegetable mixture. Continue to cook until the eggs are scrambled and set. Place half of the mixture on a plate, top with cheese, then cover with remaining scramble mix. The orange is dessert. Enjoy!
