Ingredients:
4 egg whites
1 teaspoon vanilla extract
1 dash of salt
2 tablespoons flour
1 tablespoon wheatgerm
1/4 cup cottage cheese
1 teaspoon olive oil
Instructions:
Whip egg whites with vanilla until thick and frothy. Whip in flour and wheat germ. Gently fold in 1/4 cup low fat cottage cheese. Coat a non-stick griddle with olive oil. Cook over medium high heat until golden brown. Do not under cook! Make 4 pancakes. Serve with 2 blocks of fruit of your choice. I prefer strawberries or raspberries heated in the microwave.
