This recipe is from Tunisia, North Africa -- my husband's country. In Tunisia it is considered a fast and healthy food and is served with flat bread. Usually, it is very hot (spicy), but can be made to suit your taste. I found it a quick and delicious Zone meal -- without the bread, of course. Hope you like it!
Ingredients:
1 teaspoon olive oil
3 large Anaheim peppers (hot or sweet)
4 medium tomatoes
1 small onion
2 cloves garlic
1 egg and 4 egg whites
Salt
Black pepper
Ground red pepper (to taste)
Instructions:
Heat olive oil in non-stick frying pan on low. Slice ingredients. Sauté tomatoes, onion, pepper, garlic, and spices on very low heat for 15 minutes. Add a small amount of water to keep mixture moist while cooking. When mixture is fully cooked, add eggs. Scramble mixture until eggs are fully cooked and serve.
