Hi everyone, I'm very confused about where cheese fits into play. I have not had much luck with figuring out the difference between soft and hard cheeses and how many grams we can have and which is favorable versus unfavorable. All and any ideas/suggestions are very welcome! Thanks in advance! Lynda <<will eat no cheese before its time>>

Ok now it's my turn to respond to your post!!! LOL! Well from what I can tell the best is probably mozzarella made with skim milk is the best or fat free. In one of the books - The Top 100 Zone Foods has a snack in there with chedder cheese, but it is fat free, so I would imagine that is fine too. You can always check the nutritional information on the cheese too - I'm sure if you compare fat in it, that might also give you what you need! Don't go too long without cheese...it's so delicious! :wink:

(28g). That would be good if it were not for the fat. Most contain more than a block of fat, and most is saturated. I have seen "Lite" cheeses that contain only about 3g of fat by reducing the saturated fat. I have also tried "fat-free" cheese -- they taste a bit chalky, but are ok when added to other ingredients that have good fats. My favorite cheeses are made by Lisanatti in OR (503) 652-1988. They are made from Almonds, Rice, or Soy. I like the Almond best because it only has 1g of mono-saturated fat and 2g of carbs for 7g of protein, so I can have nuts with it. The Rice cheese has 6g protein, 3g fat (2g mono-, 1g polyun-), and 1g carb. It tastes a bit smoother and makes a good 1 block protein+fat, just add half an apple. They have Cheddar, and Mozzarella "style" flavors. Both are very mild. I like the Mozzarella the best, but I eat both for variety. Their Soy versions are also good, but they just have too many carbs for me (I want my apple). They also have flavored (Jalapeno, etc) versions. I was buying these at my local health food supermarket, but they stopped carrying the flavors I liked, so I contacted the company directly. Because I can't get them locally, they sell to me at the retail price, but ship 1-2 days for free in a cold case. They do have a minimum orders size (not large), but I order a lot more than that and often, because I eat a lot of their products. I am real happy with their product and customer service.
