Exactly! Why would God make eggs with a white and a yolk unless they compliment each other, work together to make an egg a good quality food? Makes more sense to think of it as a balanced food when the entire egg is eaten, both parts contributing to the overall good nutrient quality.
The egg controversy will probably go on forever between Dr's and everyone else, but, for me it works to eat the whole thing and not waste any of it.

This site provided in the previous post by Alene explains yet another reason not to heat extra virgin olive oil.

Here's what it says:

“More than 80% of the fatty acids that virgin Olive Oils contain are protective. When these protective unsaturated fatty acids are heated above 150 degrees Celsius, the fatty acids lose the protective effects. Virgin Olive Oils are not heated above 150 degrees during processing, unlike most refined vegetable oils.”

Well, this is directly from the Holy Land Olive Oil company's website info:

Frying temperatures

When heated, olive oil is the most stable fat, which means it stands up well to high frying temperatures. Its high smoking point (210º C) is well above the ideal temperature for frying food (180º C). The digestibility of olive oil is not affected when it is heated, even when it is re-used several times for frying.
TEMPERATURE

TYPE OF FOOD
Medium (130–145º C) High water content: vegetables, potatoes, fruit…
Hot (155– 170º C) Coated in batter,flour or breadcrumbs, forming a crust
Very hot (175–190º C) Small, quickly fried: small fish, croquettes

Here's part of the article from the University of Dayton REsearch INstitute:
Because of the common practice of cooking with olive oils in Mediterranean countries as well, Carbonell wanted to investigate the toxic properties of fumes from those oils in cooking.

"What really surprised us was that there was relatively little difference in the levels of emissions from the two olive oils, either the extra virgin or the plain," Carbonell said. "And olive oil is actually healthier than canola and other oils." The researchers theorize that the inherent antioxidant qualities of olives oils may have prevented fatty acids from breaking down and releasing toxins as quickly as canola oil.

Based on the research, Sidhu and Carbonell recommend using olive oil when frying. "It's also very important not to fry oils at temperatures hotter than the recommended temperature of 350 F," Sidhu said.

And in all of the articles I read, it talked about the fact that you could cook to much higher temps with olive oil, that all oils are potentially harmful after they go past the smoke point but that olive oil has a much higher smoke point....like 400 degrees, therefore, it can be used in a much safer way than other oils that have a much lower smoke point..............and, they did NOT specify having to use certain types of olive oil for certain types of food because of toxicity ONLY for the flavor factor. The lighter ones for lighter tastes,e tc.

Hope you had a nice weekend.

Thanks for the info about cooking with the refined olive oil and saving the extra virgin for use directly on my salads, etc. This, actually, is the way my Italian grandparents taught us to use olive oil. As funny as it might sound, the extra virgin olive oil was always treated with greater respect and used as a food on the food already on our plates and never for cooking.

I love Drs. Roizen and Oz and trust their opinions on these things. Great link.

Thanks, yes, my weekend was a good one. We spent the latter part of Saturday at the beach and then dinner at a seafood restaurant. The only downside was an unpleasant negative reaction I had to an increase in my thyroid med a couple days ago (I've got a history of being hypersensitive to even slight increases). How was your weekend?

I love to pass along helpful info when I have the opportunity. Thanks for sharing a bit of your family history with us! We have very good friends in Italy who met through the Zone many years ago; "longtimers" in these forums will remember Eta/Federica and Alberto. They treat olive oil with the same respect you learned from your grandparents. Some of the olive oil we had when we visited them in Italy was absolutely amazing, very much like Zone Labs olive oil, so buttery smooth And the flavors! We tried some very delicious different varieties of extra virgin olive oil when we were there.

Yes, I agree that Dr's Roizen and Oz can be very informative.

This morning I bought some fresh organic basil at a farmer's market in the parking lot of one our local Whole Foods (there are 3 Whole Foods Markets within 30 minutes of me, when just 2 years ago there were none!). This basil is like none I've ever seen, 3 1/2 foot long root to the tip of the stem. When I finish work today I plan to make pesto of it, together with some Zone Olive Oil and pine nuts. I'm going to try to pick up some freshly grated parmesano reggiano to add to 1/2 the batch. I can't wait to try a meal of Zone Pasta with freshly made pesto!

Speaking of Whole Foods and olive oil, our local Whole Foods has a gelato bar, with all the gelatos and sorbets handmade from fresh ingredients for them by a place in Newport, RI. The gelatos are displayed in hand-formed mounds, shaped much like loaves of Italian bread, and are elaborately decorated appropriate to their flavors (cinnamon sitcks, chocolate shavings, sprigs of basil leaves, olives, etc.) The flavors are unique, my favorite being "Olive Oil". It has a very clean, simple, and not real sweet taste. Another delicious one is "Cinnamon Basil Mascarpone". The "Chai" looks interesting too, though I haven't tried it. We've only eaten it a few times, but it's a great way to indulge a little and still be able to remain in the Zone!

I wonder where all the links were when Elias asked for them way back on the 8/16/08 post?

Definitely an interesting topic, but personally don't have time to run through all of them now.

I have better things to do, we are going to "the nation's largest outdoor waterpark"!

With that, plenty of walking, and our zoned lunches all packed and ready to go!

Hey Sue,

We had a great weekend, thanks for asking. My cousin and her husband have been with us the past few days for a visit. We've been having lots of laughs and catching up on what we've all been up too. It's been great to have the time together and spend it in long and leisurely conversation.

How did the pesto turn out? Awesome, I'm sure! We love pesto. When I order next time from Zone, I'll be sure to try the olive oil. Sounds good.

My cousin owns and operates a gelato shop, and I don't think he has one called Olive Oil. I need to tell him about that. Thanks for letting me know about all the different flavors at Whole Foods. :)

I wish our local Whole Foods would hurry up and carry Cindy's Kitchen dressings. I've still got that on my mind. No one locally is carrying it yet.

Hope you're feeling better now re the medication adjustment. I know meds can be tricky sometimes.

Hi Cici!

The pesto was fantastic! I had some for dinner last night on Zone pasta. Let me know what you think of the olive oil when you try it. It's got a wonderful texture, very smooth. We eat it several times daily here.

Sounds like a fun visit with your cousins. We'll be catching up with friends and family this coming weekend at two BBQ's, on Sunday and Monday.

Thanks, I'm feeling mostly back to normal today. Just got back from a yoga class. I'd love to be one of those people who's not sensitive to thyroid hormone med changes, but unfortunately not. Next week we try to increase again, by a smaller increment. We'll see how it goes!

Hey, CBCat! The waterpark sounds like fun and also sounds like you're staying on top of your Zoned lunches! Sometimes it can be hard to choose things that "fit" when we go places like that so good thing you packed some good things!
I was wondering where the links were for Elias too. Check out a couple of those links I included in past posts when you have an opportunity, I think you'll find them interesting. Nice to know about the high heat tolerance too.

Hope the information was helpful to others, especially the newbies, too.

I was wondering why there were no links, either! Thanks, Alene, for "restarting" the discussion. I have a busy schedule at work, and the links will definitely help me to sort through the dilemma.

Sounds as if this is another one of those topics that will be debated and debated. It will really depend on whose got the more reputable source.

I am surprised that Sue didn't jump in there when I first asked for some help finding this information? She is usually "johnny on the spot".

I wondered that too Elias. Well, check out the different ones I referenced, maybe that will help give you some other "scientific opinions." I did get some olive oil after reading the one about canola. Not that I wont use canola again, but, I think olive is the best choice whenever I can afford it. I think some of the other points made about high heat toxicity are over rated though.........when you read these other researchers findings.

Anyway, dont work toooo hard! Yes, I'm sure this is another "debate til you drop" subjects.

Getting back to the topic at hand...

I am back from 2 days at the waterpark (and not even a hint of sunburn-LOL), I had a chance to look at the links that were provided. Very interesting!

I couldn't access any information on the link that Sue provided, at http://au.health.yahoo.com/041101/25/1ul8.html. Perhaps the content at that location changes frequently, but it isn't there anymore. However, I looked at all of the other links.

The one at www.realage.com is really not useful, because there is no direct reference to a non-biased research article. The only reference that I could find is a reference to a best-seller (and I am not going to bother picking up the book just to find the correct reference, but if anyone has this book and wants to share the scientific reference from where this comes from, that might be of more help).

is actually very interesting, it basically states that it is safe to use olive oil for cooking. This based on research by the University of Dayton Research Institute, and suggests that frying with olive oil is safer than with canola oil! After reviewing all of these articles, I don't feel bad about cooking with olive oil.

Especially, if one is sauteeing veggies or meat in a pan, this is usually done at a lower temperature, anyway. Looks like the discrepency is with cooking at higher temps, and we would probably not be "deep-frying" in the Zone, anyway!

Yes, the link was from Alene, but it was YOU who stated what the link says. So, I thought that you were saying something that was disproving what Alene had to say.
Alene felt that the link was "in favor" of heating olive oil", but you interpreted the opposite.

I have a very exhausting job as a flight attendant. I read the "Omega Rx Zone" about 4 years ago and started taking the fish oil. I am 47 and have been flying for 22 years. I am very active, I run and lift weights. But combining lack of regular sleep, a physically demanding job, and irregular eating patterns this job takes a toll on the body. Since taking the fish oil, I have noticed that I do not get exhausted. I get tired, but not exhausted. I stopped taking it for a couple of months and then started taking another company's fish oil. Prior to following the Zone Diet, my body fat was around 15% and my weight around 153 pounds. No matter what I did, my weight and body fat did not change much.
