I finally did it! I'm not bringing potato salad! Every year I'm asked to bring my famous potato salad (as in famous for the last 25-30 years) to the big family gathering at the lake. For the past 10 years or so, when I've been asked to bring the potato salad, I've kind of cringed at the though of slaving over a boiling hot 10 pounds of potatoes and 2 dozen hard boiled eggs, and then offering this stuff to my entire extended family (I don't even eat it!). So this year, with a new found confidence, due mostly to a yoga injury to my hand the other day (yes, yoga injury, lol), I stood my ground. When asked to bring the potato salad, I said "How about I bring a pasta salad?" , and I quickly added that I'd slightly injured my hand and did not want to peel all those potatoes (it's true!). I killed 2 (or 3?) birds with one stone. No potato salad to make (with hand made dressing also), no feeding all my loved ones the big pot of carbs and AA in the egg yolks, and best of all, I'll have an entire Zone meal right there becasuse I'm using Zone Pasta for my salad! YEAH for me! :) I'm going to make a huge salad of Zone Fusilli, canned tuna, green peppers, ane either canola mayo or a Zone olive oil and lemon dressing. I'm supposed to bring a dessert too. I'm still working on figuring out that one. :) Anyone else have Zone food plans for the 4th? |

Sue, Lot's of "attagirls", accolades, ruffles and flourishes to you. The "other side" of my family - the "outlaws" - are wonderful charming people who also happen to have one of the most atrocious diets you can imagine. One of them is in his 30's and has cholesterol totally off the charts in every way. I could tell you many stories about "eating events" at their homes but I'll just relate what I consider the "best one" by far that should speak volumes about what I am up against whenever in their company: The father, the day we visited, had that morning been released from an "intermediary care" facility after being there THREE MONTHS. He was there because after QUADRUPLE Bypass surgery he had developed a life threatening infection that had to be managed on a daily basis. He had lost a LOT of weight and literally looked like "death warmed over". The "eating event" was a cook out to welcome him home. Are you ready for this ? As USUAL EVERYTHING served at the cook out was a broadside of deep fried items,or, salad dressings full of the wrong kind of fats, or, juicy "worst cut" steaks, or , pork, ribs, etc., etc. The best part was a scene that is indelibly burned into my memory of my father in law barely able to stand, at the grill, cooking steaks flaming from the fat content slathered in butter and talking about how he couldn't wait to "eat some real food for once" Whenever we visited them for their frequent cook outs I would always bring my own food. One day I told my wife that if they couldn't be bothered to have one or two simple items I could eat I couldn't be bothered to go. Why I didn't do that years ago I don't know ! Didn't cause a ripple. Whenever I go now there's always a few grilled items for me, and, isn't it amazing how the amount of those items has grown as others now are eating at least some healthy items too ! Actually for the 4th I'm planning on NOT EATING : http://www.slashfood.com/2006/01/16/slashfood-ate-8-worst-foods-you-can-eat/ Just for grins here's the poop on a fried Snicker's Bar !!!!!! Wanna know how the deep-fried Snickers Bar adds up? Then read more Order the King-Size version and you'll be downing over 700 calories and 44 grams of fat. And that's not the worst of it. Some pubs serve their fried candy bars with a side of fries and call it a meal. Now that's what I call junk food. I think the fried Snickers should be added to the list of foods you should never eat. Let's see - just turning one into a Zone Snack by the FAT CONTENT would mean : conuming along with it - another approx 36 grams of protein ! which for example would be : a 6 ounce fillet mignon ! Sounds like a winner at the local county fair food baccanalia : "Steak'n Snickers" ! Happy 4th E.Wally |

I will probably make some cheescake bites topped with strawberries, blueberries & lite cool whip arranged to look like a flag.
taking a traditional cheesecake recipe and motifying.
replace regular cream cheese with a blend of lowfat & non fat style cream cheese. Replace egg with egg whites. replace sugar with splenda.
Use reduced fat nilla wafers as the crust in the mini cupcake holders. Filling is about 2 or 2-1/2 tbsp baked for 15 minutes.
For the topping I blend some frozen fruit, splenda, unflavoured gelatine and simmer.
The last batch I made came out to around 77 calories with 9 grams C, 5 grams P & 3 grams F. Very close to being zone balanced. They are a bit small and I wouldn't use them as a snack replacement in my daily meal plans but they are a great sub to those non friendly desserts that are usually available.
I actually won a healthy potluck contest with these this year. |

The other thing I always take to cookouts is a 3 to 5 bean salad depending on what is in the pantry.
Mix of high & low density beans. black, red kidney, white kidney, garbanzos, green or wax in various style cuts. cucumber, onion, pepper, balsamic vinegar and seasoning. I never make it the same twice. I just measure the the amount of carbs put in and figure out what serving size equals a block. The wife & I then have good clean carbs to go along with what ever fish or chicken is on the grill.

Hey Matt! Now that your back here I can finally ask what I've been dying to ask you. How'd you get those pix down in your sig? Red, white and blue cheesecakes. That's cool, and the prize, too! I like 3 bean salad. I bring it to a lot of BBQ's, so I'll know I'll have a good carb to eat. Every year on the 4th it never fails. Some members of my extended family just can't stop commenting on how I eat. You'd think they'd give up after all these years. I'm waiting to hear what they say about my big plate of pasta this year! |

I was never truly gone. Just haven't had much time to comment. Vacation and work load have been extreme lately.
I uploaded them to photobucket and then did a directlink. If you move your cursor over the pics you will see the photobucket link. I think I had to save them as small pics first before I uploaded. It has been a while. I should take some more current pics. I haven't lost any weight but I have toned up a little bit. I am still working on that. I have eaten mostly zone friendly for the last couple months but have done a little cheating and too much fruit, I know I could have done much better.
I have to run now but if you don't figure out the pic thing let me know and I can walk through it. Once I see the screens it would all come back to me.

Thanks Matt. I'll see what I can do. Extreme vacation, sounds good to me! Your kids are adorable (I assume they're your kids). They remind me of my two oldest daughters. They're 2 yrs apart but a little older than your's, probably close to your age, lol (29 and 31). We have a son too, age 22. And, I'm going to be a grandma in the fall! (our middle daughter) I'm still wrapping my head around being "Grandma", but I can't wait! Don't sweat the eating thing. You know how to do it. And don't work too hard! :) I work from home on my laptop so it's easy for me to pop in here to see what's going on. |

Thanks Sue! Yes those are my girls. Those pics are out dated. I don't use photobucket often. Kind of a strange collection of pics I have on there. Glad I didn't have anything too embarassing.
My girls are 17 months apart. The oldest will be 4 in August.
The extreme vacation was 2 weeks off work and 10 days in Florida. Did the Disney World thing and had a trip over to Sarasota for a wedding. We had a blast. It was non stop and very tiring. Rented a house in Orlando area so our eating was pretty well balanced. Took snacks with us in the parks and had energy to burn ever single day.
Your's aren't quite as old as I am. I'm 38 but feel like I'm under 30 these days.

| The pics were very cute! (well, yeah, on puzzling pile of something...) Disney is always a blast. Last time we went to Orlando Disney (my first time) was 4 yrs ago. I've been to Disneyland in Anaheim a lot more because my in-laws used to live only a couple hours away from it. 38, same as my oldest daughter's boyfriend. That always seems a bit strange to me to have kids old enough to have Bf's who are 38 (so I don't think about it!, lol!). No one ever believes my age (56), which of course, I love! They think I'm younger, and I feel like I'm younger. We'll be a at party with people reminiscing about things, and they'll say as an aside to me "Well, you're too young to know about this". Many times it turns out they're younger than I am! I'd give the credit to the Zone, but it's been happening since way before that. But, I'm sure the Zone is a big help! :) |

I have a new dish that the Fourth inspired. Apple/fruit crumble. It is not perfectly balanced nor 100 zone friendly but best I could do with converting the non zone recipe. Fill bottom of pie dish with sliced fruit, mound a little in the middle. Mix 1 cup soy flour, 3/4 cup splenda, 1 tbs baking powder, 2 egg whites. It will be somewhat dry and crumblie. Top the fruit with this mixture, pour 4 tbs of melted smart balance lite made from evoo. Bake @ 350 for 18-20 minutes. My dish had about 10-11 C blocks & 7-8 P blocks and 7 F blocks. I served 1/8th of the dish as a snack or dessert. Top with a light cool whip. Cinammon optional before backing. |

Hi, Matt! I wasn't sure what you were talking about until I got to this thread. Sounds like a nice dessert! I am not a big fan of cheesecake, though (referring to your other recipe). I didn't cook anything for the 4th. My brother-in-law was in intensive care after complications from his surgery in June. Oh, I moused over your pics and found your pix collection. Cute kids! I will have to look at doing that, too! I have some really cool pix of my kids (although I may be a bit prejudiced). |

Dr. Barry Sears is a leading authority on the dietary control of hormonal response. I have been taking the Fish Oil for over 3 years now. I am 44 playing hockey and working out. The Fish oil helps with the pain that I get from playing hockey. It greatly enhances my performance on the ice and while working out. I have noticed a big difference in my energy, attentiveness and memory. I have a very exhausting job as a flight attendant. I read the "Omega Rx Zone" about 4 years ago and started taking the fish oil. I am 47 and have been flying for 22 years. I am very active, I run and lift weights. But combining lack of regular sleep, a physically demanding job, and irregular eating patterns this job takes a toll on the body. Since taking the fish oil, I have noticed that I do not get exhausted. I get tired, but not exhausted. I stopped taking it for a couple of months and then started taking another company's fish oil. My wife's doctor told her to read "Enter the Zone" and to do the diet, so I told her I would do it with her. After only one week on the plan we went on a strenuous hike (the first of the year), and when we stopped at our favorite coffee shop on the way home I was able to get out of the car and stand upright and walk into the place without pain or stiffness. The Zone had eliminated all the inflammation that had always forced me to stumble all humped over into the coffee shop any time we skied or hiked all day.

Prior to following the Zone Diet, my body fat was around 15% and my weight around 153 pounds. No matter what I did, my weight and body fat did not change much. I regularly cycled 20-30 hours per week logging well over 400 miles. That had little impact on body fat or weight. Diet also seemed to have little impact on body fat or weight. Within a couple of months of following the zone diet, my weight dropped rather quickly to 142 pounds and body fat to about 8%. I still regularly cycle up to 20 hours per week (during the summer). I have also started strength training. I eat about 16 blocks per day. I take 3.6 grams of fish oil per day, along with Vitamin E, Alpha Lipoic Acid, CoQ10, and B & C vitamins. I also take GLA, which in my opinion, has significantly reduced fatigue and improved recovery times after exercise.
