I am one of the new chefs for my church program. We cook each week for nearly 200 and I want to introduce them to the Zone. Meals that have sadly met with success at church are things like chicken with rice cooked in mushroom soup with boiled green bean and rolls. (no wonder Indiana leads the nation in obesity) As a result everyone is hungry about two hours later. (DUH!) Usually I cook zone meals for just my family. However, the constraints in our church kitchen are a commercial convection oven, a vegetable steamer and a six burner stove with oven. Brazing and broiling is VERY time consuming for 200. (Think - BIG POTS!) Would I be compromising too terribly to steam the veggies, brown the meat on flat trays in the convection oven and stick them together rather than follow the preparation techniques for smaller quantities? Also, people around these parts are used to separate portions but the zone approach doesn't work well without the proper ratios. What recipes would anyone advise for proper ratios and servings? Due to personell issues (we don't have servers) and the fact the food is served buffet style would require cassarole type meals. I think the Enter the Zone has the best cassarole type meals. Any suggestions here? How many blocks would 200 people eat? Using the fictional "average american male" per Dr. Sears seems resonable. No? Thanks.

wow! what an undertaking! Congratulations on a wonderful effort. my thoughts are these: if you make a caserole then people can tend to pick out more of one ingredient than another - but you cant help that. Perhaps something like a mince dish or lasagne where it is more mixed in together would encourage a better zoned serving. Education: leaflets, word of mouth etc encouraging them to see how they feel after your meal would enlighten them Remember that there are individualities in Zoning and what suits one may not suit another. One person may be better with less carbs whereas another may do better with more carbs ( or fat) . I think your intentions are terriffic!!! but dont get hung up on ways to MAKE them "eat right". You can take a horse to water but you cant make them drink, as the saying goes. you asked how many blocks for 200 males? Using the recommended amount of 4 blocks per male then you would need 800 blocks per meal. Good luck with it all cheers top

Thanks for the input. I guess I should look at this as an eductional experience for me and my group. Thanks for the heads up. A little flyer containing words of nutritional advice about eating in the Zone could be just right. The only risk is we usually have a $300 budget and with the quantity of veggies and other ingedients I might go a bit over or have a challenge staying under it We ask for donations and there is a risk I could turn people away but I think if I emphasize the health benefits and hit pretty close to favorable taste I will win some converts. Thanks again.

Thanks again.[/quote:7227fff3f7] Have you considered adding Black Beans? They are one of the few favorable dense carbs in a ZONE lifestyle? Black Beans are flavorful, add to casserole type meals, and only 1/4 cup equals one block of carbs.

You cats have all the cool input :) I am still in the planning stages as I am not due to implement this program until the fall. However, as TopBoffin indicated, Zone for 200 is quite an undertaking. I have a lot to learn about tastes and preparation techniques for such a large number. However, based on eating habits of the eaters, they have a lot to learn about eating better. Thanks for all the input. I will keep you posted as this takes shape.

Idea for a possible menu: Mexican Lasagne: (Layer low-carb tortillas with "taco meat" (could be turkey), black beans, salsa, cheese, commerical enchilada sauce. Go mild and pass the picante) Vegetable salad: mixed veggies dressed in vinaigrette Fruit salad: various zone-favorable fruits. Can be made with canned pineapple, mandarin oranges, etc. to save some chopping time) Nuts on the side to sprinkle over fruit salad if desired. (Some may have nut allergies). Just an idea. I love planning parties! :) Ronica
