The weather was really feeling like fall this weekend, a chill in the air along with some rain and dark clouds. The perfect time for a nice bowl of delicious steamy hot soup! I like to cook enough to last a few days when I make soup, and I like variety. With this in mind, yesterday I made a big pot of veggie soup, one that I can add to for a few days to create different meals and snacks. This soup is made to contain the carb and fat in the proportions I want for the Zone. Then I can simply add different proteins to it for a variety of meals and snacks. I think of it as homemade convenience food. I don’t use formal recipes too often when I cook. It’s easier to use whatever I happen to have on hand. The soup I made yesterday turned out to contain the following: 1 generous Tablespoon olive oil a few cloves of garlic 1 very large sweet onion, chopped 2 large carrots, sliced 1 bunch of celery (a celery heart), sliced 1 zucchini, cubed 1 very small white potato, cubed ½ cup cannellini beans 2 Tablespoons steel cut oats 1 Tablespoon barley 2 1-quart boxes low sodium chicken broth Seasonings: Celtic gray sea salt, onion powder, garlic powder, paprika, thyme and rosemary After simmering it for about 45 min, this made a very nice and fragrant soup. This made about 12 cups of soup containing about 1 carb and 1 fat in each cup. For dinner last night, I had the soup, and to add protein to the meal, a bowl of vanilla tofu cream for dessert (another one of my creations). Today I plan to add some Italian flavored chicken sausage to my bowl of soup, and tomorrow or the next day (if there’s any left!) I’ll either add some chicken breast to the soup, make a chicken salad (cubed cooked chicken with a little canola oil mayo and chopped celery), or pair the soup with a salad topped with grilled chicken breast. |

| Sue - You seriously need to write a Zone Cook book. I took a look at some of your photos (I just had to nose through your link ;-) and everything looks delish! You're truly an inspiration. Sometimes I come here just to read what you have to say and see what I can learn from you. Thanks so much for all the help! |

Hi, My name is Michelle. I have been studying this site all week-end long. Tomorrow is my big day to dive "into the zone" Thank you Sue for all your insight and knowledge. I love the soup recipe, and the idea to add different proteins to each portion to change up the meal.
Now what about the Tofu vanilla cream, please do tell :-) |

| I make a tortilla soup that is very similar. I think the only difference is I also add diced green chilies and red pepper flakes for seasoning, add rinsed black beans, pink pinto beans, chopped tomatoes and lentils instead of where you add barley. The soup broth/base is basically the same. I let it simmer all day in the crock pot and then we have either ground turkey breast (seasoned with a no salt homemade mix) or grilled chicken breast for additional flavor and protein. My girls like to crumble oven baked wheat tortilla chips on top with pepper jack cheese. Yum-oh. I think I just planned dinner for tomorrow night! |

VanillaTofu Cream:
Blend tofu, olive oil, alcohol free vanilla flavoring and a little water in a food processor. Once it's smooth, keep processing it will become silky smooth. |

Hi Sue, Loved the idea of making soup so i went through the fridge and have a pot simmering on the stove right now! I followed the basic idea of your recipe and went form there. Zucchini, carrots, garlic, turnip, beans, spinach, oats, barley and spices. The house smells wonderful. Can't wait till it's done! Oh, and congratulations on the new grandbaby! Paula |

| A great Zone soup to make on the run is egg drop soup. I use a can of low fat chicken broth, a tbls of Mrs. Knorrs dry veggie soup mix (I keep packages on hand). Let it come to a boil and cook for a few minutes, turn on low then when it stops boiling, add 3/4 cup of eggbeaters slowly. Stir gently to make the egg into strings. I add parm cheese and eat. I will eat a side salad with this and a cup of strawberries for desert. Easy and fast for lunch or a quick dinner. |
