I can't remember the thread I was on, that someone was looking for the chili recipe that I use. Well, I will just start it as a new thread. I found this recipe online, and I think it cooks up pretty similar to "Wendys Chili". Note, there is tomato juice in this recipe, and you can adjust it if that is your preference. Ingredients: 18oz ground beef 10% lean ⎘P] 6oz mozzarella cheese ΔP] 3 cup onion (petal) ΐC] 2 cup green pepper (chopped)ΏC] 2 cup red pepper (chopped)ΏC] 4 cup tomato (chopped) ΐ.5C] 2-12oz cans V8 juice ΒC] 3/4 cup canned tomato puree Ώ.5C] 1-1/2cup black beans ΔC] 6 tsp olive oil separate ⎞F] chili powder onion powder nutmeg basil allspice cinnamon parsley cilantro crushed red pepper sage Directions: Brown ground beef, salt & pepper and some spices in 3 tsp of oil. Place all other ingredients in crock-pot, except for cheese. Add 2 cups of water. Add browned meat. Add spices to taste. (there is no science to spices, just add as much as you like) Cook in crock-pot for several hours until hot through out, stirring occasionally. Divide into 6 serving (2-cup servings) bowls and top each with 1 oz of cheese. May be frozen/refrigerated for later consumption. Remark: Makes six 3-block meals, 2 cups each |

| Thanks! It is a handy recipe to have. Sounds like it is a good thing to keep portioned out in the fridge. In the winter time it would even make a good afternoon snack! |

Your very welcome! This applies to Linda, too, please let me know how you like it if you have tried it. I also have another chili recipe. It is for Cincinnati Style Chili. It is a chili that is unique to Cincinnati, Ohio. It is meant to be served over spaghetti. I have adapted it so that I can serve it over spaghetti squash, instead (it would not work with Zone pasta, as the Zone pasta already has protein added, thus it would make the protein content too high). If anyone is interested, I would share it. However, again, my file is only on written paper (lost my computer file in a failed hard drive that was not properly backed up). So, if you guys and gals would like it, just give me a few days to get it written up, and then I will post it (and save it in my hard drive again!). |

This does look good. I think I'll have it for dinner tonight even though it's not quite chili season. I'm just ready for something different. What's up with the goofy characters after each item? I think that's supposed to be the number of P, F and C. ?? |

Oh, I never noticed those goofy numbers! Must have been some kind of formatting error when I copied it over from my recipe. Yes, they USED to be the number of P-C-F blocks. And, in my book, any time of the year is a good time for chili! LOL! |

perfect timing CC. I am getting ready to evacuate tomorrow. (Beaumont area) for Gustav. I came here for some large bulk recipes to get us through in our little camper. This chili is perfect. I also thought of making a big veggie stew of sorts. Tomato base with lots of veggies.... to eat with some bbq chicken..... or whatever. But maybe I should put some ground turkey in the stew too. Have it all ready. sigh....

I am back in "the zone" and loving every bit of it! I did the zone about 6 years ago and lost about 25lbs., went down 3 dress sizes and felt amazing! I went to college, didn't follow the zone and gained everything back and more. Now I am back in "the zone" and staying there. |

Hi, Alyssa! I can't find my "zoned" version at the moment, but I have the original recipe. If you give me a day or so, I can make the zoned revisions to it again. Just got back from camping, and I have loads of stuff to do (and probably shouldn't be on the "puter" right now). LOL! |

Here is my recipe for "Cinci Chili and Spaghetti" Just a few notes: I add fat according to the fat content of my ground meat. So, if I use a really lean meat, I may have to saute in some oil. Or, if my meat has ample fat, then I use just a splash of oil for sauteeing. The base recipe is 4 servings, each serving is 3P and 2C (and depends on your fat adjustment). If you add the toppings listed below, you will round out the carb to 3 C. I only use a sprinkling of cheese, or sometimes I cut back on the ground meat, so that I can add more cheese. I don't use enough onion topping to make a difference. I DO count the beans for my 3rd block of carb, though. -------------------------------------------------------------------------- Cincinnati Chili Recipe 1 large onion chopped (1 C) 18 oz extra-lean ground beef (12 P) olive oil for sauteing the onion and ground beef-amount is dependent on the fat content of the ground meat 1 clove garlic, minced 1 tablespoon chili powder 1 teaspoon ground allspice 1 teaspoon ground cinnamon 1 teaspoon ground cumin 1/2 teaspoon red (cayenne) pepper 1/2 teaspoon salt 1 1/2 tbsp unsweetened cocoa or 1/2 ounce grated unsweetened chocolate 1 (15-ounce) can tomato puree (3 C) 1 tablespoon Worcestershire sauce 1 tablespoon cider vinegar 1/2 cup water 4 cups cooked spaghetti squash (4 C) Toppings (see below) In a large frying pan over medium-high heat, saute onion, ground beef, garlic, and chili powder until ground beef is slightly cooked. Add allspice, cinnamon, cumin, cayene pepper, salt, unsweetened cocoa or chocolate, tomato sauce, Worcestershire sauce, cider vinegar, and water. Reduce heat to low and simmer, uncovered, 1 1/2 hours. Remove from heat. Cook spaghetti squash and transfer onto individual serving plates (small oval plates are traditional). Ladle chili over spaghetti squash and serve with toppings of your choice. Cincinnati chili lovers order their chili by number. Two, Three, Four, or Five Way. Let your guest create their own final product. Two-Way Chili: Chili served on spaghetti Three-Way Chili: Additionally topped with shredded Cheddar cheese Four-Way Chili: Additionally topped with chopped onions Five-Way Chili: Additionally topped with kidney beans Makes 4 servings. ------------------------------------------------------------------------- Hope you enjoy! |

Cranberrycat, Thank you so much. I will have to make the Cincy Chili soon. I just made the other chili yesterday and I absolutely love it. Of course, I wish I wrote down how much of what spices I put in, because I just did it all by free hand.

I am really glad you enjoyed the chili, and please let me know what you think of the Cinci Chili! I think that I had gotten the recipe from the Skyline website, so it should be close to the original! At least, I think it does serve the purpose because it is the blend of the seasonings that make it special. But, definitely feel free to make it your own! |

Cranberrycat The Cinci Chili looks yummy. But my husband is allergic to cocoa/chocolate. If I leave it out, do you think it will change the recipe much?
Also does cocoa powder have to be "counted" or is it considered a "freebe"? |
