Hey ya'll does anyone know how vanilla extract affects your blood sugar? In the zone book Dr. Sears mentions vanilla extract as an item to pick up on his grocery list. Do you think it is o.k. to use like a 1/4 of a tsp. to sweeten smoothies, plain yogurt, coffee? I can't find where he mentions what it would be counted as, and there are no nutrition facts on the box. Can anyone help? thanx, Kara

In the amount that you suggested, vanilla extract would not affect blood sugar. It may help to make some meals very enjoyable! Just make sure it is a pure vanilla extract, and not the imitation.

I was told that alcohol free vanilla was best but you can only find it here at health food stores like Whole Foods and its more expensive. I just use regular pure vanilla but dont really think it sweetens.
