Shrimp FraDiavolo

3 Block Meal

Ingredients:
½ cup or 1 block equivalent mashed canned stewed tomatoes - varies brand to brand
½ cup grape tomatoes, halved
2 garlic cloves, minced
¼ cup chopped onion
½ cup frozen chopped zucchini
1 Tsp. red pepper flakes
4.5 oz frozen cooked shrimp, thawed
Couple dashes dried parsley &/or italian seasoning
¼ cup chicken broth (optional)
Sea Salt to taste
3 cups wilted baby spinach, torn preferably
1 Tsp Extra Virgin Olive Oil
1 hard sesame bread stick

Instructions:
Measure and put your shrimp aside to thaw. In a skillet, put stewed tomatoes, halved grape tomatoes, garlic, chopped onion, zucchini over low-medium heat. When zucchini is thawed add the red pepper flakes and shrimp along with herbs. If your sauce is a little thick, add some chicken broth. Heat until shrimp are heated through. Salt to taste (or use a dash of Parmesan if you are salt-sensitive). While shrimp are cooking; in a seperate pot, or in microwave, steam the baby spinach until wilted. Put on your plate, and spoon finished tomato sauce over the top. Drizzle with olive oil and serve with bread stick.
