Curried Chicken Salad with Lentil and Feta Salad

2 - 4 Block Meals

Serves 2

Ingredients:
7 ounces cooked chicken, cubed (rotisserie or prepackaged)
2 ribs celery, diagonally sliced
1 cup seedless grapes, halved
2 baby carrots, shredded
2 scallions, diagonally sliced
1/2 cup yogurt, plain 2 percent
2 tablespoons Patak’s curry paste (hot or mild) or substitute 2 tablespoons curry powder
Salt and pepper to taste
1 tablespoon cashews, chopped

Instructions:
In a mixing bowl combine, chicken, celery, grapes, carrots, and scallions. In another bowl combine yogurt with curry paste or curry powder. Add yogurt mixture to chicken, toss to mix well. Garnish with cashews and serve with Lentil and Feta Salad.

Lentil and Feta Salad

Serves 2

Ingredients:
1 1/4 cups lentil, canned/rinsed/drained
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
2 tablespoons oil packed sun-dried tomatoes, drained and sliced into strips
2 tablespoons Feta cheese
1 tablespoon red wine vinegar
1 tablespoon fresh lemon juice
1 tablespoon extra virgin olive oil
Salt and freshly ground black pepper to taste

Instructions:
Rinse and drain lentils. Place in bowl. To the lentils add oregano, thyme, and sun-dried tomatoes. In another bowl mix red wine vinegar, lemon juice, olive oil, salt and pepper to taste. Pour dressing over lentils and gently toss to mix. Top with crumbled Feta cheese.
