Creamy Chicken and Asparagus Soup

This is a simple, tasty, cost effective recipe that doesn't take too long to prepare. For thick, puree style soup, only add 1/2 cup of stock. Be careful not to use too much olive oil spray on onions. I hope you enjoy this meal as much as my asparagus hating partner does!

1 – 3 block meal

Ingredients:
2oz. chicken breast fillet, cut into small pieces
1/2 cup low fat natural yogurt
Olive oil spray
1 cup asparagus, canned tips and spears, drained
1 cup onion, chopped finely
1/2 - 1 cup chicken stock (depending on desired consistency)
salt and pepper to taste

Instructions:
Lightly spray frying pan with olive oil spray and saute onion until soft and transparent. Allow onion to cool slightly then place in food processor with asparagus, yogurt and chicken stock and blend until almost smooth. Lightly coat chicken w/ olive oil spray and cook until lightly browned. Add asparagus mixture and gently simmer for 5 minutes, stirring occasionally and taking care not to let it boil. Season as desired.
