Summer Broccoli Salad

Ingredients:
2 cup of fresh broccoli
1/2 cup of onion
3/4 cup celery
1/2 cup tomato
1/2 cup carrot
1/4 cup chickpeas, rinsed/drained
9 slices of turkery bacon
1/2 packet of dry ranch mix
3 tsp of sliverd almonds
1/2 cup soynaise
fat-free spray olive oil

Instructions:
Blanch broccoli in boiling water for 1 minute, rinse under cold water to preserve bright green color. Chop all veggies and put in a large bowl, pour dry ranch over veggies. Cook turkey bacon let sit to crisp up and crumble into veggies. Use spray fat free spray olive oil on a pan and place almonds in and cook till lightly brown and place in bowl. Stir in soynaise till coated and mixed. Best when refridgerated over night.

Editor's Note: If desired replace turkey bacon with your choice of protein = 21g
