Tuna Patties

Ingredients:
1 cup grated zucchini
2/3 cup grated potato
2 egg whites
2 oz canned tuna, drained
1 clove garlic, minced
Pinch salt and pepper
1 teaspoon olive oil

Instructions:
Mix all together in a bowl. "Fry" in nonstick fry-pan (each pattie, no bigger than palm of hand.) Editor?s Note: Recipe sounds good. It would be even better if potatoes could be dropped to 1/3 cup without destroying the consistency. Then 1 block of fruit could be added to the meal, giving a better proportion for favorable carbohydrates.
