Lentil and Salmon Soup

Like other legumes, lentils have a healthy dose of soluble fiber, which helps regulate blood sugar levels. They pack a hefty amount of nutrients. They are extremely rich in folic acid, and they also contain respectable levels of potassium, iron and copper. Combine them with salmon for a Zone power meal.

2 - 3 Block Meals

Ingredients:
3 cups Progresso Lentil Soup
1 cup diced canned tomatoes
10 ounces cooked salmon, flaked
1/2 cup roasted peppers, drained and chopped
1 clove of garlic or to taste
12 Kalamata olives, sliced
2 pears, apples or oranges, served on the side.

Instructions:
In a saucepan add the lentil soup, tomatoes, garlic and cooked salmon (may use cooked salmon from store, canned, or cook your own). Bringto a simmer and heat until hot. Serve each bowl of soup with a piece of fruit for dessert.
