Swiss Style Chicken

Serving size for a typical female

Ingredients:
2 ounces chicken tenderloin, diced
1/2 ounce low-fat Swiss cheese, shredded
1/4 cup plain low-fat yogurt
3/4 cup onion, chopped
5 cups spinach
3/4 cup tomato, diced
1/3 cup Mandarin orange slices
1 teaspoon olive oil, divided
Dash celery salt
2 tablespoons lemon- and lime-flavored water
1/2 teaspoon Worcestershire sauce
1 teaspoon parsley flakes
1 teaspoon garlic, minced
1 tablespoon cider vinegar
Dash ground nutmeg

Instructions:
In a medium nonstick sauté pan combine 1/3 teaspoon oil, yogurt, and celery salt. Add chicken, onion, Worcestershire sauce, parsley, and water. Simmer for 3 to 5 minutes. In second pan heat remaining oil. Add spinach, tomato, garlic, vinegar, and nutmeg. Sauté until spinach has wilted and tomato softens slightly. Sprinkle cheese over chicken and let melt. Spoon spinach onto serving plate and top with chicken. Garnish with orange segments and serve.
