Southwestern Chicken With Pepper And Bean Salsa

3 Block Meal

Ingredients:
1 1/3 teaspoons olive oil
4 ounces chicken tenderloin, diced
1 tablespoon garlic, minced
1/2 cup salsa*
3/4 cup onion, chopped
1/4 cup kidney beans, rinsed
1/4 cup black beans, rinsed
2 teaspoons chili powder
1/8 teaspoon celery salt
black pepper, to taste
5 cups spinach

Instructions:
Heat oil in a medium nonstick saute pan and add chicken and garlic. Saute until chicken is cooked through and slightly browned. Add salsa, onion, kidney beans, black beans, chili powder, celery salt, and pepper and heat through. Form spinach into a bed on serving plate. Top with chicken mixture and serve.

*Note: We used a medium-heat salsa. Use whatever strength you prefer.
