Thai Turkey Soup

Ingredients:
6 ounces ground turkey
1 1/2 cups bean sprouts
1/2 cup scallions, sliced
5 cups spinach leaves
1/4 cup cooked fine egg noodles
3/4 cup light fruit cocktail
1 1/3 teaspoons olive oil
3 teaspoons garlic, minced
1/2 teaspoon fresh gingerroot, grated
2 tablespoons soy sauce
3 cups chicken stock
1 tablespoon hot chili pepper, finely diced

Instructions:
Combine turkey, sprouts, scallions, oil, garlic, gingerroot, soy sauce, stock, and chili pepper in a medium saucepan. Bring to a boil, reduce heat, and simmer for 15 minutes. Add spinach and noodles. Simmer for 1 minute. Spoon into serving bowl and serve with fruit cocktail as a side dish.
