4 Block Meal
Ingredients:
1 1/3 tsp. olive oil
8 oz. firm tofu, 1/2" cubes
1/2 c. chopped onion
1 medium zucchini, 1/2" rounds
12 spears asparagus
2 medium tomatoes, 1/2" cubes
1/2 c. finely chopped fresh basil or parsley
2 tblsp. tamari
1 tsp. ground cumin
1/2 tsp. turmeric
1/8 tsp. cayenne
Fruit for dessert
Instructions:
In a large silverstone skillet, heat the oil on medium-high heat. Add the tofu, onion, zucchini, asparagus, and garlic. Stir-fry until crisp-tender - about 3 minutes. Add tomatoes, basil or parsley, tamari, cumin, turmeric and cayenne pepper and stir-fry until the tomatoes are heated through, about 1 minute. Serve immediately.
