Approx. 2 – 4 block meals
¼ cup olive oil
1 lb Shrimp (peeled and de-vained)
2 tablespoons soy sauce
1 ½ tablespoons scallions, sliced
1 tablespoon gingerroot, minced
1 teaspoon garlic, minced
1 tablespoon of wine vinegar
Course ground black pepper to taste
In a plastic baggie place olive oil , shrimp, vinegar, soy sauce, scallions, ginger, garlic, and pepper. Close bag and shake. Place mixture on a baking sheet coved with foil for easy cleanup. Bake in a preheated 350-degree oven for 30 minutes.
This recipe provides 2 – 4 block protein portions. To balance each serving have a large tossed salad, steamed broccoli and a piece of fruit for dessert.
