1/3 cup equals 1 carb block
Ingredients:
1 cup corn
2 cups black beans
1 cup red pepper, chopped
1½ cups sweet onion, chopped
handful of fresh cilantro (to taste) chopped
1/3 cup lime juice
2 Tsp chili sauce
2 Tsp. crystalized fructose
1 clove garlic, minced
salt & pepper to taste
Instructions:
Place first five ingredients in a good-sized bowl. Mix lime juice, chili, sweetener and garlic in another small bowl, and pour over vegetables and toss. Keeps several days in the fridge.
Comments/ Notes:
Very nice with grilled meats for dinner or add cubed low-fat cheese or tofu for your protein blocks. It works well for a portable lunch. Makes about 15 carb blocks.
