Dijon Mustard and Tarragon Chicken

I've been experimenting with the Zone for a few weeks because I truly enjoy delicious food, and initially found it challenging to make tasty meals. Every time I compose a great meal I just get so enthusiastic! I had to share this delicious yet so simple chicken meal with others on the Zone.

Serving size for typical female

Ingredients:
1 chicken breast, 3 ounces (free range/organic if possible)
1 ounce turkey bacon (2 slices)
1 tablespoon Dijon mustard
1 tablespoon Fresh tarragon, remove from stem and chopped Salt and pepper to taste
One large tossed salad
1 teaspoon olive oil with vinegar to taste
mixed fruit salad

Instructions:
Rub chicken breast with salt, pepper, Dijon mustard and tarragon. Place in Ziplock bag and refrigerate for 30-60 minutes. Wrap bacon around chicken. Preheat over to 350 degrees. Bake in over for 40 minutes or until internal temperature is 180 degrees. Prepare large tossed salad made with: Lettuce, baby spinach, red pepper, cherry tomatoes, chickpeas and basil. Toss with oil and vinegar dressing. Dessert - mixed fruit salad 1 cup strawberries, sliced A couple of melon slices Dollop of whipped cream.

Editor's note: Dave Schreck, head of technical support for Dr. Sears, adapted a recipe posted on Drsears.com. The recipe originally called for pancetta, Italian bacon. Turkey bacon was substituted. He also added mustard to the ingredients.
