Indian Shrimp With Apples and Yogurt

4 Block Meal

Ingredients:
4 1/2 ounces cooked small shrimp*
1/2 cup plain low-fat yogurt
3/4 cup onion, minced
1 Granny Smith apple, diced
5 cups romaine
1 1/3 teaspoons olive oil
1/8 teaspoon fresh gingerroot, minced
1/2 teaspoon garlic, minced
1 tablespoon cilantro
2 teaspoons cider vinegar
dash hot pepper sauce
1/4 teaspoon turmeric
1/8 teaspoon ground coriander
1/8 teaspoon ground cumin

Instructions:
Heat the oil in a medium nonstick sauté pan. Add shrimp and spices. Cook 1 to 2 minutes. In a second nonstick sauté pan heat yogurt, apple, and onion. When heated through, add shrimp mixture. Stir to mix. Form a bed of romaine on a serving plate and top with shrimp mixture.

*Note: Shrimp should be deveined and shelled.
