Spaghetti Squash Supreme

2 - 3 Block Meals

Ingredients:
1 medium size white spaghetti squash (orange “orangetti” for sweet)
2 cups of tomato, garlic spaghetti sauce (look for one with a low sugar count)
10 ounces extra-lean hamburger (Substitutes: turkey burger, Italian turkey or chicken sausage, ground chicken breast)
1 cup fresh chopped mushrooms
Garlic powder or one clove of fresh garlic, chopped, if desired
Salt and pepper (sprinkle lightly to taste)
Cilantro or parsley (if desired)

Salad:
4 cups Fresh Express Italian Salad blend
Vinaigrette dressing
1 teaspoon black olives
4-8 mild pepperchinis

Instructions:
Cut the squash in half, scoop out the seeds and place in oven at 350 degrees, split side down in baking dish. Cook for 25-30 minutes. While the squash is baking, prepare hamburger in skillet or break apart and broil in oven. Then add mushrooms, spaghetti sauce, garlic powder or fresh chopped garlic to taste. Add to hamburger and simmer until thickened. Turn the squash over, sprinkle lightly with salt and pepper to taste, fill cavity with hamburger mixture and bake another 25-30 minutes. Sprinkle lightly with Parmesan cheese. (Skim mozzarella or other approved cheese may be substituted.) If desired turn on the broiler to lightly brown the surface. Can be served in the shell or easily scooped and arranged nicely on a plate. The Squash will break apart like angel hair pasta. Sprinkle with Cilantro or parsley for color and flavor if desired. Serve with salad blend, olive oil and vinaigrette dressing, a few sliced black olives and one or two mild pepperchinis.
