4 - 4 Block Rollups and Gazpacho
1 whole roasted chicken (store bought) yielding about 1 pound of meat
1 pound Asian coleslaw or low-fat coleslaw, well drained
2 tablespoons toasted slivered almonds
4 each low-carb lavash roll-ups
1) Remove chicken from the bone. Chop coarsely.
2) In large mixing bowl add chicken, container of coleslaw and gently mix. Drain off any liquid. Add toasted almonds.
3) Heat roll-ups in microwave for 25 seconds.
4) With roll-up on prep service, place 1/4 of the mixture three inches from the end nearest you (there should be a row of salad mixture from left to right), fold over and snug up to tighten mixture; then fold in the sides and continue to roll up.
