Serving size for typical woman
1 teaspoon olive oil
1 cup sliced leeks
4 1/2 ounces fillet of sole
4 ounces white wine
1 teaspoon minced garlic
1 shallot, minced
1 teaspoon fresh dill
Salt and Pepper to taste
1/2 teaspoon lemon-herb seasoning
1/2 cup blueberries for dessert
1. Preheat oven to 375°F. Brush a medium baking dish with the olive oil. Layer bottom of dish with leeks. Place sole on top. In a medium bowl, combine wine, garlic, shallots, dill, salt, and pepper. Gently pour wine mixture into baking dish.
2. Sprinkle with lemon-herb seasoning. Tightly cover baking dish and place in oven. Bake for 25 to 30 minutes and serve.
3. Have blueberries for dessert.
