Foil-baked Cod With Mushrooms

Ingredients:
4 cups fresh mushrooms, any kind (button, shiitake, shimeji, etc.)
1 1/3 teaspoons olive oil
6 ounces cod fillet
Salt and ground black pepper to taste
1 teaspoon sake
1/4 lemon, cut into wedges
Soy sauce to taste
1 cup Mandarin oranges for dessert

Instructions:
Trim off the hard ends of the mushroom stems and depending on the type used, either separate mushrooms into small clusters or cut caps into thin strips. Prepare an 8-inch square of aluminum foil and spread 1/3 teaspoon olive oil in the center. Place fish in the center of square and season with salt and pepper. Add the mushrooms, sprinkle fish with 1 teaspoon sake, and top the rest of the olive oil. Seal packet by bringing two edges of the foil together and folding over twice. Then fold the other edges toward the center. Preheat oven to very high, 480 degrees F (250 degrees C) and bake 10 to 15 minutes. Serve the fish in the foil. Garnish with a wedge of lemon and drizzle with soy sauce.
