3 Block Meal
Ingredients:
3 ounces meat(boneless chick breast, low-fat chicken sausage, 4 1/2 ounces lean hamburger)
1 1/2 cups eggplant, peeled and diced
3/4 cup onion, chopped
1 cup Mushrooms, sliced
2 cups canned tomatoes, chopped with juice
1 teaspoon olive oil
2 tablespoons Patek's mild curry paste
Instructions:
In Dutch oven or deep skillet, brown meat in olive oil. Add vegetables. Stir in curry paste. Cook over medium high heat, stirring until mixture starts to steam. (It will be a little dry at first, but as the eggplant cooks, it will get moist.) Cover, reduce heat to low and simmer for about an hour, stirring occasionally, until eggplant is tender.
(Note: The ingredients listed above are for one 3-block serving. Increase proportionately as needed. You could probably also use tofu in place of the meat, to make this a totally vegan meal.)
