Too Good to Be Eggplant Bake

2 - 4 Block Meals

Ingredients:
14.5oz can Contadena Pasta Ready Tomatoes (herbs & olive oil added)
1 1/2 cup portobello mushrooms, sliced
1/2 cup green pepper, chopped
2 1/4 cup eggplant, sliced
4oz Healthy Choice Garlic Lovers Cheese
6oz ground beef, browned
9 olives, sliced

Instructions:
Slice Mushrooms and Eggplants into 1/4-inch slices. Using a 9 inch square non-stick baking pan, single layer of eggplant, top with 1/2 of tomato sauce, layer mushrooms, 1/2 of cheese, layer of eggplant, remainder tomato sauce, ground beef, remainder of cheese and top with green pepper and olives. Cover pan tightly with foil, bake at 350 degrees for 20 minutes. Makes 3 generous portions. We fill in rest of blocks with spinach salad and fruit. Guaranteed standing ovation for the chef! Editor's Note: Denice, I made an adjustment in your ground beef measurements. One block of ground beef equals 1.5 ounce. Make sure the ground beef is less than 10- percent fat. Another idea is to use the new texturized vegetable protein that looks like ground beef. We use one called "Recipes." It's loaded with protein.
