Swordfish With Peach-Cucumber Salsa

4 Block Meal

Ingredients:
6 ounces swordfish steak
1 peach, chopped
1/2 cup salsa*
2 cups cucumber, chopped
5 cups romaine
3/4 cup shallots, diced
1/4 cup dry white wine
1 1/3 teaspoons olive oil
1/2 teaspoon dill
1 teaspoon lemon- and lime- flavored water
1/2 teaspoon lemon herb seasoning
salt and pepper, to taste

Instructions:
Place swordfish in a baking dish. Drizzle with water, oil, and wine. Sprinkle with dill, salt and pepper, and lemon herb seasoning. Cover and bake in a preheated 350- degree Fahrenheit oven for 30 to 35 minutes. In a small bowl combine chopped peaches, salsa, cucumber, and shallots. Place lettuce on one side of a large dinner plate. Spoon salsa mixture on top of lettuce, then place swordfish on the other side of plate and serve.

*Note: We used medium heat salsa. Use whatever strength you prefer.
