3 Block Meal
Ingredients:
3 ounces skinless chicken breast, diced into one-half inch pieces
1/4 cup egg substitute (or 1 egg)
3/4 cup cooked oat groats (1/4 cup dry)
1 1/3 teaspoons olive oil
2 cups celery, diced small
1 1/2 cups cooking onions, diced small
1/4 cup green onion tops, chopped
2 cups raw spinach, chopped (optional)
2 tablespoon soy sauce
Instructions:
Heat one-half of the olive oil in nonstick skillet. Stir fry chicken until done. Remove from skillet. Add remaining oil to skillet. Stir fry celery and cooking onions until crisp tender. Add spinach and continue stir frying until spinach is wilted. Add green onions, chicken, and oats to skillet. Stir to mix, then push mixture to one side of skillet and add egg to empty area of skillet. Scramble eggs until done; then stir into oat mixture. Remove from heat, sprinkle with soy sauce and lightly mix before serving. Ham or shrimp may be substituted for chicken, and other favorable vegetables may be substituted for celery and spinach, such as mushrooms, peapods or Swiss chard. (I made this for my husband this week, and he likes it better than fried rice!)
