I know we're supposed to limit carbs like corn, but I had some from pre-Zone days and didn't want to throw it out...plus I still love it!
3 Block Meal
Ingredients:
4 1/2 ounces white fish, such as cod
Dash each lemon and lime juice
Salt and fresh ground pepper
1 teaspoon olive oil
2 cups mushrooms, sliced
3/4 cup onion, sliced
1/4 cup corn
1 1/2 cups chopped tomatoes
Basil and oregano to taste
Instructions:
1. Put fish in shallow pan with a little water, sprinkle with lemon and lime juices and add salt and pepper to taste. 2. Bake fish until it flakes easily and is opaque throughout. 3. While fish is baking, heat oil in large skillet and stir-fry veggies and add seasonings. 4. Make a "bed" of the veggies and serve with the fish on top. Editor's note: I cut the amount of corn used from 1/2 cup to 1/4 cup and upped the quantity of the other veggies. For a three-block meal, try to keep unfavorable carbohydrates to one block or less, then make a note about how you feel two hours after your meal.
