Summer's End Vegetables

Two, 3-block meals
(Serve this delicious vegetable mixture with 6 oz chicken or 9 oz. fish for two servings.)

Ingredients:
1 1/2 cup chopped onions
2 1/2 chopped peppers
2 small zucchinis, trimmed and cubed
1 eggplant, trimmed and cubed
4 ripe tomatoes, cut in chunks
4 garlic cloves, minced
1/2 cup basil leaves
2 teaspoons olive oil

Instructions:
Saute the onions in oil in large dutch oven. Add ingredients in the order listed letting each one cook a bit before adding the next. Simmer for about 1 hour (or more), add basil and garlic about 15 minutes before the end of cooking time. This is a variable recipe. You can add more of any ingredient.
